Sometimes, if I turn my head away for a few seconds, the mob will disappear. I tested it with a mob with a name tag (in vanilla, they don't despawn) but it still despawned. This is really frustrating like horses with diamond armor despawn, and villager zombies despawning when you grab your gapple and you potion. Even the great giant despawned in front of me. Is this a minecraft bug, an anti-lag plugin, or what?
